- Prepare 4 of Squash.
- You need 1 lb of Fresh whole green beans.
- Prepare 4 large of portobello mushrooms; cleaned & sliced.
- You need 2 lb of Fresh halibut.
- You need 1 tbsp of Pepper.
- You need 1 tbsp of Garlic salt.
- Prepare 1/2 cup of Olive oil.
- It's 1 of Lemon.
- You need 4 tbsp of Olive oil.
- You need 1 of Lemon zest.
Grilled Squash & Halibut w/ Green Beans & Portobellos step by step
- Slice squash lengthwise in 1/2" thick pieces and set aside.
- Mix 1/2 cup of olive oil, pepper & garlic salt and baste squash and grill in ribbed pan until tender.
- Cut halibut into about 1" to 1 1/2" pieces.
- Heat 2 tbsp olive oil in pan and cook halibut with lemon juice.
- Heat remaining 2 tbsp. olive oil in another pan and sauté green beans & mushrooms. Season to taste with salt & pepper..
- Place squash on plate and top with halibut, green beans, & mushrooms..
- Sprinkle lemon zest on top for extra pop.
